Italian Cornish Game Hens Recipe


Ingredients
  • 3 Cornish Game Hens, halved
  • 3 lg. dried hot chili peppers, crushed
  • 6 cloves garlic, halved, slightly crushed
  • 1 1/2 tbls. ground sage
    or 18 leaves
  • 2 onions, chopped
  • 3 tbls fresh chopped parsley
  • olive oil
Directions

Beat the game hen halves flat with a meat mallet. Remove larger bones if desired. Brush all over with olive oil, sprinkle with 1 tbls. ground sage and salt & pepper to taste. Rub in the seasonings slightly. Heat 2 heavy skillets or cast iron frying pans adding enough olive oil to cover the bottom. Spread garlic evenly in the pans and lay bird halves on top. Add chile pepper, sprinkle with remaining sage and cover with a lid. (to keep the cornish hens flat in the skillet, use a lid that is slightly smaller in diameter than the top of the skillet. Weights on top of the lids can also be used).

Saute over moderate heat for 10 minutes, remove lids and spread onion over top of hens, turn over once, sprinkle with parsley, re-cover and cook 10 to 15 minutes longer. When cornish hens are done, arrange on a platter, saving juices. The cornish rock hens go well with spinach and potatoes moistened with the juices saved.
